Bananas Foster Topping/Mixture for Prepared Plain Oatmeal

Bored with the same old oatmeals-  McDonald’s and Starbucks Oatmeal (which are both great but I am getting kind of tired of raisins, cranberries and apples)- I have recently taken to making my own inventive mixes to add to plain oatmeal.  You can use instant oatmeal or make the real stuff (depending on how much time you have).  Of all of the toppings I have invented, this one is, by far, my favorite!

1/3 cup of dark brown sugar

1/2 tsp vanilla extract

1 tsp rum extract

3 ripe to overripe bananas sliced or chopped

Directions:  Sauté all ingredients in a pan until they are blended and the sugar stars to carmalize and get gooey.

Mix with prepared plain oatmeal.

Makes at least 3 servings.  Reheats well.
